The original flagship restaurant of Hawaii Regional Cuisine pioneer Peter Merriman, this Waimea institution has defined farm-to-table dining in Hawaii since 1988. Set in the cool upcountry town of Waimea surrounded by cattle ranches and vegetable farms, Merriman's sources nearly 90% of its ingredients from local farms within a 60-mile radius. The wok-charred ahi and the Big Island goat cheese salad are legendary.

Tip: The pre-fixe Chef's Menu is the best way to experience the full range of Merriman's cooking philosophy. Reserve at least two weeks in advance for weekend dinners. The restaurant is quieter at lunch and equally excellent.
